Trees, Please!

All five of my kids call broccoli "trees" - and usually they will only eat it raw, with plenty of ranch dressing.

Of course, raw veggies are super good for you (minus the ranch!), but variety is nice sometimes, too. So, when I came across this recipe in Parents magazine, I had to give it a try. And guess what? It's been a hit!

Preheat oven to 425. In a shallow baking pan, mix:
1 lb cut up broccoli
2 TBS olive oil (I reduce this to 1 TBS and it comes out fine)
3 cloves garlic, finely chopped
1/2 tsp salt
1/4 tsp pepper
1/3 cup panko bread crumbs (whole wheat, if you have it)

Roast for 13-15 minutes, or until broccoli is tender, stirring once. Right before serving, sprinkle lightly with parmesan cheese.

Next up on my list: finding a great recipe for a healthy dip to replace all that Ranch!!!
